Saturday is a special day,

it's the day we buy laminate before the coupon expires on Sun-day! And boy am I excited! I was so excited I forgot to get the other things I went into town to buy and came straight home. I had to call Justin in the parking lot to tell him it all fit snugly in the car. I had to call Rebecca who I knew could share the in the joy. And now I'm taking a picture for the blog. Oh the smile on my face. This is our first time being able to change a house into our home... and put in whatever we want!





23 boxes of dark brown, wide planked flooring. Now the "funny" part is Justin's overtime check was deposited today. Hmmm... We have NEVER received a pay check on Saturday. I think Heavenly Father must have seen the dead line in his Costco coupon book. Thanks for the pretty flooring Heavenly Father. Stayed tuned for the installation process. That should be fun:)

Calzones!

We LOVE Italian food! I ate pizza almost everyday of MacKenzie's pre-birth. So I have this amazing pizza dough recipe, (it's works in California Rebecca) that has turned out every time so far. A few weeks ago Justin and I decided to make calzones with it... SO GOOD!!! Notice the 3 !!! I made them again last night and was in heaven after 2 previous nights of disgusting home made mac & cheese, and even worse pasta salad. Yay for comfort food that turns out fantastic!



Here's the recipe:
2 cups hot water from tap
1 TB dry active yeast
2 TB brown sugar (to me that means 4-5 TB brown sugar)
mix it
4-5 or even 6 cups flour
1 tsp salt
mix it, let rise one hour

I know you're thinking "1 HOUR!!!" In that time you can clean the kitchen, change a diaper or 2, threaten your wild children who are really not listening now that it's the end of the day, get your pizza topping and sauce ready. It goes by fast.

Spray your not pizza stone:) make your calzone. Baste the top with olive oil and bake 425* for 12-15 minutes. SOOO good. Tell me how it was if you actually try this.

Get out of the heat!

Our children were ALL farmed out this past weekend with the agreement that I would pick them up on Tuesday. Well I got a wild hair and joined them at the beach. Yes I missed them, but why stay in 115* when you can vacation at 72*? Sunday night I joined my MIL @ her "Beach House" (time share) in Ventura and upon stepping out of the car I asked myself, as I always ask myself, "why don't we live here?"

While in Ventura we went to the Santa Barbara Zoo, shopping at the Camarillo Outlets, played on the beach AND... ate dinner at Snapper Jack's! Snapper Jack's has THE TASTIEST surf-mexican food! I always get a chicken chimichanga, although I enjoy the fajita burrito and pretty much any thing else on the menu. Anyone planning a trip near Ventura you must stop by!

In the Pool

I was driving along the other day thinking, "Man, it's not even that hot today." I looked at the temp and it said 97*. Since when was 97* not that hot? This week I've noticed there's a heat advisory meaning it's well over 100*. Still not feeling it so much. I just run the swamp cooler and then we hop in the pool after lunch for an hour or 2. Did I mention how much we enjoy swimming? And the best news is our power bill... $50 baby! That's right 100+ weather and $50 bill! I will now get struck by lightening and have a $300 bill for the rest of the summer, but for this month all I have is a happy :)

Happy July!

Only 5 months until Christmas, yet right in the middle of summer. My sister Khristie's birthday, swimming, fireworks... I tried to change my birthday to July last year. It didn't work out so well, but it was worth a shot. Check out this VERY festive dress MacKenzie wore to church!



By the way it was MacKenzie's birthday! She's 2, but she'll tell you she's 3. (Kennedy thinks she's 5). My mom sent her some Princess books and toys, we gave her a Cinderella phone and gum drops, and Justin took her to the store to pick out her own birthday cake. We have decided it's SO much fun for the kids to pick out their own cake with Daddy.




When Grayson turns one for a few months we'll have kids ages 1, 2, and 3! We are so lucky to have such good kids for how old they're not.
